Apple Cinnamon Nutmeg Cake (Eggless)

With a plan to make an eggless apple cake, I prepared fresh spice powders from cinnamon and nutmeg that would go into the mixture to flavor this cake. You can read about home made spice powders [nutmeg and cinnamon] over here.




With lots of apples at home, I tried making apple sheera, sanjori and now was itching to do some baking. This delicious cake recipe is fluffy and moist with chunks of apple pieces bursting spice flavors in every bite. The below recipe works fine for big cake as well as cupcakes.



Ingredients

1 cup all purpose flour/ maida
6 tbsp powdered sugar
1/2 apple, peeled and grated and the other half diced into small cubes
1 tbsp condensed milk [Higher side if you prefer the cake to be more sweet]
2 tbsp +2 tsp milk
1 tsp baking powder
1 tsp baking soda
2 -3 drops vanilla essence
1 tsp cinnamon powder
1/4 tsp cardamom powder
50 gm butter/ 1/2 stick [room temperature]
pinch of nutmeg powder
pinch of salt
Tutti fruit pieces coated with all purpose flour
Frosting/Icing for decoration [optional]



Method:

Beat the butter and powdered sugar until it becomes creamy. Add condensed milk and vanilla essence and beat it again. Add cinnamon powder, nutmeg powder, cardamom powder and mix it well.

Sieve all purpose flour, salt, baking powder and baking soda. In a mixing bowl, combine these dry ingredients. Now gently fold the dry mixture [alternating it with milk] into the wet ingredients and mix well to form a batter. [Take care not to leave any lumps in the batter]. Next add grated apple as well as cubed apple pieces. Sprinkle some flour over the tutti frutti enough to coat them nicely. Later fold in tutti frutti pieces in the cake mixture.

Preheat the oven to 180 C. Line the muffin pan with paper liners, scoop the batter into the paper cups, filling halfway and bake it in preheated oven for 25-30 minutes or until done [depending on the type of oven you may need to keep a watch]. Remove them from oven and place them on wire rack, allow them to cool completely. Decorate as per your wish or serve them plain.



On kids demand, I prepared it again on next day, only thing is I used a loaf pan to bake the cake mixture [just to make my work easy and save the cleaning time ;)]. Bake it for 40 mins or until done [depending on the type of oven you may need to keep a watch]. Once done allow the cake to cool on wire rack. Slice them and serve. They taste delicious. Enjoy them as dessert or even as tea-time snack !

Note: If you go back to the pic of cupcakes cooling on wire rack  you can see the surface cracked and crusty , it was because I placed the muffin tray in the wrong rack that was close to upper coil in the oven. I trimmed the cake from top, crumb coated the tops and put in the fridge. After some time I took them out and frosted them :)
