Home made spice powders - Nutmeg and Cinnamon

Nutmeg/ Jaiphal

Nutmeg is an aromatic spice derived from the fruit of nutmeg tree. We get the actual spice by breaking the outer black colored shell of the dried fruit/nut. It is usually used to flavor Indian sweets and sometimes in savoury dishes [Mughlai cuisine]. 



Cinnamon/ Dalchini

Cinnamon bark is widely used as spice/flavoring ingredient in both savoury, sweet and dessert foods. True cinnamon "Cinnamomum verum", the popular one is said to originate from Sri Lanka.

I usually buy the bark rolled into quills and powder them as an when I require. This is because the freshness and flavor disappear quickly. It is one of the ingredient of garam masala. 


Let's see how can we can we prepare these powders.

Method:

Nutmeg powder
This is usually grated or crushed to be used freshly in powdered form.

Cinnamon powder
Dry roast the whole cinnamon stick/ quill for few seconds. Allow it to cool. Break cinnamon to small pieces and put them in small jar of the mixer or coffee grinder. Grind/ pulse it to a fine powder. 

Store both, nutmeg and cinnamon powders in airtight containers away from sunlight. To finish it as early as possible prepare them in limited amount.
