When I came across this tried and tested cupcake recipe by Pavithra at Dishesfrommykitchen, I got this urge to bake them instantly. The recipe not only called for common simple ingredients that most of us would keep stocked in fridge and kitchen, but the process of blending these ingredients also was very simple. Inspite of super-busy schedule on the day before the travel - office, packing, cooking, Christmas activities at school for kids... I decided to bake these mini cupcakes with a plan to carry them as energy boosting food for kids during our travel [hence exclusion of coffee]. Replaced white sugar with brown sugar as I wanted these mini treats to be a little healthier. The cakes turned out perfect and tasted delicious!

Method:
Preheat the oven to 180 degrees C. Prepare the pan by placing cupcake liners in the pan. [I placed mini cupcake liners in muffin pan]
Sieve the flour, powdered sugar, cocoa powder, baking soda and whisk it together in a large bowl. Gently push the dry ingredients with a spatula to the sides of the bowl and make a well in the center. In another bowl mix all the liquid ingredients well and pour them into the well. Use a spatula/ scraper to gently fold these ingredients. Scrape down the sides as needed and mix until nicely combined with no lumps. Do not over mix.
Fill each liner with 2/3rd full batter [I used 1 tbsp spoon to scoop out the batter and fill in the cake liners] Bake in a preheated oven for 15 -17 mins or until the cupcakes are done. Allow them to cool completely on wire rack otherwise being moist they will crumble. Decorate them as per your preference and serve them with milk/ tea.
