Raita, a refreshing side dish is made with curd/yogurt and mixed with vegetables, fruits as per their availability. We love variety of raitas such as cucumber raita, tomato raita, carrot raita, beet raita at our home and I prepare it quite often. Below is an easy recipe of cucumber raita.
Ingredients
2 cup chopped cucumbers
1 cup curd/ yogurt
1 green chilli [ you may increase this as per your preference]
1/2 tsp roasted cumin powder
1/2 tsp black salt/ Kala namak
Pinch of red chilli powder for garnish [optional]
Coriander leaves, finely chopped to garnish
Method:
Wash and peel cucumber. Finely chop them and keep aside.
Take curd in a bowl and whisk it until smooth. Add chopped green chilies, black salt, roasted cumin powder and mix well. You may add water if the curd used is thick. Now add chopped cucumber and mix again. Sprinkle pinch of red chilli powder, pinch of roasted cumin powder. Chill it for 15-20 mins before serving this raita. Garnish with finely chopped coriander leaves and serve it as side-dish
You may also add finely chopped onions or tomatoes as variation. You may also add finely chopped red chili instead of green chili. Below is the variation I did by adding finely chopped onion [1 medium size] and finely chopped red chili.
Relish this raita with Pulao, Biryani or as dip with rotis and parathas. You can see in below pic raita served as an accompaniment with Tawa Pulao.
